Tuesday Night is our blackberry-thyme spritz — a fresh, fruit-forward mocktail that proves a no-alcohol drink can be every bit as special as the cocktail beside it. Muddled blackberries and fresh thyme steep into our Calicutts Vanilla Bean Sugar simple syrup, then get a squeeze of lemon and a generous top of sparkling water. The result is a refreshing non-alcoholic spritz that’s ideal for designated drivers, expecting moms, dry-January gatherings, or any weeknight that deserves a little ceremony. It’s an easy make-ahead recipe — build the base the night before, and pour over ice when you’re ready. Garnished with a thyme sprig and a couple of plump berries, it earns its place at the table.

Ingredients

    • ½ C Calicutts Vanilla Bean Sugar

    • ½ C Water

    • ½ C Vanilla bean simple syrup (recipe above)

    • ¼ pint Fresh blackberries (about ¾ cup), plus extra for garnish

    • 3 sprigs Fresh thyme, plus extra for garnish

    • ¼ C Fresh lemon juice

    • Sparkling water, to top

      1. Combine the Vanilla Bean Sugar and water in a small saucepan. Warm over medium heat, stirring, until the sugar fully dissolves — do not boil. Cool completely, then store sealed in the refrigerator for up to two weeks.

      1. In a bowl, combine the simple syrup, blackberries, and thyme. Muddle well to release the berry juice and the herb oils. Let steep at room temperature for 30 minutes.

      2. Strain through a fine mesh sieve into a pitcher. Stir in the lemon juice. (You can refrigerate the base, covered, overnight.)

      3. To serve, pour about 3 ounces of the base over ice. Top with sparkling water.

      4. Garnish each glass with a fresh thyme sprig and two blackberries.
