These grilled Golden Goddess chicken skewers are the bright, golden, crowd-favorite protein your next cookout has been missing. Boneless thighs marinate in olive oil, fresh lemon, and our Calicutts Golden Goddess Blend — a sunny, herb-forward seasoning — then hit the grill for charred edges and juicy centers. Easy to prep ahead and quick to cook, they’re ideal for summer grilling, backyard parties, meal prep, or an effortless weeknight dinner served over rice or greens. A final squeeze of lemon and a scatter of fresh herbs keeps everything fresh and vibrant. Marinate, skewer, grill — this is the kind of simple, flavor-packed chicken recipe you’ll come back to all season.

Ingredients

  • 1½ lbs Boneless skinless chicken thighs, cut into 1½-inch pieces

  • 1½ Tbsp Olive oil

  • 1½ Tbsp Calicutts Golden Goddess Blend

  • 1 Lemon, juiced and zested

  • ½ tsp Flaky finishing salt

  • About 12 bamboo skewers, soaked in water for 30 minutes

  • Lemon wedges and fresh herbs, for serving

Directions

  1. Combine the chicken, olive oil, Golden Goddess Blend, lemon juice and zest, and salt in a large zip-top bag. Massage to coat. Marinate 4–24 hours in the refrigerator.

  2. Thread the chicken onto the soaked skewers, 4–5 pieces per skewer.

  3. Heat a grill or grill pan to medium-high. Grill the skewers about 4 minutes per side, until cooked through with good char marks.

  4. Squeeze fresh lemon over the platter as the skewers come off. Garnish with parsley and lemon wedges, and serve.
